Week 15: Cinnamon Griddle Cakes

Hello friends. I didn't realize until I logged on to update that I had not done anything for the month of February. I will try to remember some of the recipes I did and add the other weeks. Well, I was thinking about breakfast possibilities and came across a recipe for4 Cinnamon Griddle Cakes. Sounded interesting, so thought I'd give it a try. I wanted to do something a bit different with it to make it my own so I added cinnamon chips. You could also add raisins or nuts as well. They were very good. Puffed up very nice and instead of pancake syrup you make a glaze out of powdered sugar, a little vanilla flavoring and some milk and drizzle over the hot griddle cakes. They tasted like a hot cinnamon roll. Only took about 15 minutes to prepare and then the cooking time. A great recipe that will sure to please anyone. It doesn't even have to be for breakfast.
